Everything Oatmeal Bars

As I said on Facebook, these are certainly strange times when a woman who hates to bake bakes two weeks in a row!

So I took an old recipe from my grandmother, Grandma Alice, who used to bake what she called "Cowboy Cookies." They were a favorite with my sister Deb and me. Oatmeal cookies, but with chocolate chips instead of raisins. We loved them!

The secret of the "Everything" cookie is actually Walmart's "Indulgent" Trail Mix. It has chocolate chips, white chocolate chips, peanut butter chips, peanuts, raisins, dried cranberries, almonds and cashews. It truly is sinfully indulgent, and more of a dessert than a trail mix.

Since we had some cinnamon chips from the Amish Market in the cupboard I added them, too. If you're going to be sinful, you might as well do it right! And if you have any other favorite things, why not throw them in?

So here's the recipe:

Everything Oatmeal Bars

1 c. butter (2 sticks)
1 c. white sugar
1 c. brown sugar
3 eggs
1 tsp. vanilla
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 c. oatmeal
2 c. flour
1-1/2 to 2 c. Indulgent Trail Mix, Chocolate Chips, Peanut Butter Chips, Craisins, or whatever your heart desires.

Cream butter & sugar, beat in eggs, add vanilla & dry ingredients. You can either make these into cookies by dropping onto cookie sheets and baking at 375 for about 10 minutes, or do what lazy folks like me do and just spread the whole thing into a jelly roll pan. Bake that at 350 for about 25 minutes or maybe a little more.
